Same as last time these are recipes and meals that we are honest to goodness fixing and eating in this house... with real feedback from me and my husband and my kiddos. I always like mix a few of the long time favorites with new recipes - what about you?
So without further ado.... here's what's cooking in our house.
Baked Potato Bar... this is an oldy but goody in this house. Sometimes my kids eat it and sometimes they don't. Last week they didn't. But that means more leftovers for me. YUM!
Coconut Chicken... this was a brand new recipe for me. And in general I am too lazy for dredging chicken like this recipe calls for. But I waited to start dinner until my husband was home for some extra hands in the kitchen and let me tell you - the extra work was worth it. This recipe was SO good AND the kids ate it AND there were a few leftovers. Total yum. I highly recommend this!
Black Bottom Coconut Bars... I figured since I had coconut in the house I could make another family favorite. These bars are AMAZING! This time I made them in a cupcake tin and we all ate a few and I froze a few for later. They freeze well and thaw in about an hour on the counter. We usually make these for Christmas, but they are good any time of year.
Black and Blue Mojitos... these are obviously just for the adults... but as a parent you need a good cocktail every once in a while. These did not disappoint. YUM!

I will absolutely be making that coconut chicken for dinner this week! I bought shredded coconut for a dessert, but didn't end up using it, so it's been sitting in the cupboard while I've wondered what the heck to do with it. Hooray for this recipe!
